Wheat Berry Salad with Garden Vegetables and Feta Cheese
Wheatberries are one of our favorite grains to add to salad recipes, bowl recipes, or when we need a hearty vegetarian recipe.
It’s a great way to stretch your store-bought vegetables or garden veggies. Wheat berries are really filling!
Wheatberry Salad Ingredients
To make our favorite wheat berry salad, you’ll need:
- Cooked wheat berries
- Lettuce or spinach
- Onion
- Cucumber
- Tomatoes
- Bell peppers
- Balsamic vinaigrette
- Feta
- Salt
- Pepper
This recipe can be made as red wheat berry recipes or with white wheat berries.

I love this recipe because it’s filling and you can also play around with the ingredients based on what you have at home.
This easy recipe is one of our favorite ways to eat salad with wheat berries — it’s more of a Greek style wheat berry salad.
But, I will also use any garden vegetables that we have or any vegetables we have in the refrigerator that need to be used up.
I think it’s also better with an oil-based or vinegar salad dressing instead of a creamy dressing, but that’s personal preference.

RECIPE TIP: To save money on food, we buy our wheat berries in bulk like this. Then, I portion out 1-2 cups dried wheatberries (uncooked) and vacuum seal them in serving packages for pantry storage. They will last a very long time like this!
Greek Wheat Berry Salad
Ingredients
- 3 cups cooked wheat berries*
- 3 cups lettuce chopped, type of choice (or spinach)
- 1/2 cup red onion diced
- 1/2 cup English cucumber diced
- 1 cup cherry tomatoes halved
- 1/2 cup bell peppers diced, color(s) of choice
- 1/2 cup Balsamic vinaigrette
- 1/2 cup feta cheese crumbled
- salt to taste
- pepper to taste
Instructions
- In a large serving bowl, add chopped lettuce. Add in chopped vegetables and toss.
- Spoon cooked and drained wheat berries over the lettuce mixture.
- Pour balsamic vinaigrette over wheat berries, lettuce, and vegetables. (You may find that you like more or less dressing, so adjust it to your taste.) Toss and gently stir until wheat berries, lettuce, and vegetables are completely coated.
- Add salt and pepper, to taste. (Feta cheese is very salty, so you may want to taste it with the cheese before adding salt.)
- Top with feta cheese and serve.
- Store leftover salad in an airtight container in the refrigerator for up to 3 days. (Any longer and the veggies start to get soggy.)
