This easy cucumber dip is a perfect idea for what to do with cucumbers going bad (mushy cucumbers) or for fresh garden cucumber recipes. It’s ready in minutes, is a cheap recipe for dips and appetizers, and makes a great snack for kids, too!

How To Make Cucumber Dip With Cream Cheese
A couple of years ago we started making this when we had several mushy cucumbers that I didn’t want to throw away. Now, it’s a regular easy snack for us!
It’s also great if you have a bunch of garden cucumbers that you don’t know what to do with!
RECIPE TIP: We've tried this as a cucumber dill dip recipe (with fresh dill), too, but found that we preferred the fresh taste of just the cucumber and the cream cheese. Play around with it and see what you like!
To Make Cucumber Cream Cheese Dip, You’ll Need These Recipe Ingredients:
- 1-2 fresh cucumbers (we leave the peel on for this recipe)
- 1 block of plain cream cheese, softened
- Salt, to taste
- Pepper, to taste
- Crackers, bread, carrots, or tortilla chips, for serving

Is it OK to eat the skin of a cucumber?
We make this cucumber dip with the peel on the cucumber.
The skin of a cucumber is perfectly safe and even good to eat. However, it is mostly a taste preference.
So, you don’t need to peel cucumbers if you don’t want!
RECIPE NOTE: Store-bought cucumbers often have an edible wax applied for preservation. It is food safe and safe to eat, but we always scrub cucumbers from the store before eating them with the skin on.
Step-by-Step Recipe Instructions For Cucumber Dip
1. Shred cucumber (including the skin) inside of a medium bowl. Don’t drain the juice!
(I just use my regular cheese shredder for this.)
RECIPE TIP: The trick to this recipe is not discarding any of the liquid that comes from the mushy cucumber once shredded. Be sure to mix that in with the cream cheese to give the dip more flavor.
2. To the shredded cucumber, fold in the softened cream cheese. Stir until completely combined with the shredded cucumber and cucumber juice.
3. Salt and pepper, to taste.
4. Serve with salty crackers, celery and carrots, crusty bread, or tortilla chips.
5. Store in an airtight container in the refrigerator. Stir again before serving.
